Pump machines heat water to 90-95 degrees – the optimum temperature for coffee – and correctly set pressure gauges will extract the best flavour from your coffee. All you have to do is fill the espresso makers’ filter holder with ground coffee and let the pressurised hot water make you that perfect espresso or flat white.
